After what was probably the longest and miserable winter i have ever experienced, spring has finally arrived! Now instead of spending breaks upstairs in the cantene warming up on coffee were outside trying to get red in the face. It's just great!

Ugly yet tasty bean burgers


These might not look like much at all.. in fact they are pretty damn unattractive. Note to self: don't cook them for ur to-be-better-half on a first date. It'll send them running. They do however, taste pretty damn fantastic. What are they? Bean burgers. Long flat ones. :) We made them this weekend from my student cook book "cheap eats". Very simple, and yes. It was cheap and is healthy too.. perfect :).
need: one can of kidney beans, one can of butter beans, 2 chillis, pickled root ginger in a syrup, 2 small red onions, 3 cloves of garlic, breadcrumbs, one egg, parmesan cheese, oregano, basil, salt, paprika, one cucumber, more garlic, bulgarian yogurt, wraps, one tomato, greens.
do: Preheat the oven to 180 degrees. Finely chop the onions, chilli, ginger and garlic and lightly fry over low heat. In a seperate bowl and with a food processor blend both cans of beans together. Once the onions and stuff is cooked add to the bean mixture. Add the spice (as much as is nice for you). Spoon the mixture as you like onto a baking tray, You can do this long like we have, in pattys, or cover the whole thing like a polenta. Then coat each one with a layer of egg, breadcrumbs and parmesan. Pop it in the oven for 20 mins. When the bean pattys are cooking you can make the tzatziki. chop the cucumber in half and deseed, then finely chop and put in a bowl along with the bulgarian yogurt, garlic and some coarse black pepper. Once the pattys are done heat up a wrap until it's golden. Now start building up your wrap..Bean patty, tzatziki, chopped tomato and some greens, wrap the thing up and voila! enjoy. The sweetness of the ginger combined with the chilli and almost sour yogurt make a great combination..lekker.
